Executive Chef Pete Dalitsouris grew up in a small village (Paleopanayia) outside of Sparti, Greece. Trained as a chef, but uniquely inspired by the village life of his home town. His style is classical Mediterranean blended with family recipes and traditional Greek cuisine. He arrived in the United States in 1991 wanting to share his unique touches of Greek Mediterranean cuisine. Theo's Taverna of Pinehurst, NC was Chef Pete Dalitsouris’s first restaurant concept in NC. In 1999 he moved to the Raleigh, NC area to continue developing his cuisine.
Notably his first years in Raleigh were spent developing the menus and concepts of the Carolina Ale Houses and Taverna Agora as the Executive Corporate Chef. Partnering with his two brothers, Ike and Kosta Dalaitsouris, his passion for Mediterranean fusion cuisine and culture is now being carried on through Mythos Bistro.
